1 lb boneless, skinless chicken breasts, cooked and shredded
4 cups mixed greens (romaine, iceberg)
1 cup shredded carrots
1 cup thinly sliced red cabbage
1/2 cup sliced green onions
1/4 cup chopped cilantro
1/4 cup slivered almonds, toasted
1/4 cup crispy chow mein noodles (for crunch)
Dressing: 1/4 cup rice vinegar
Dressing: 2 tablespoons soy sauce

Instructions
Prepare the dressing. Whisk together rice vinegar, soy sauce, sesame oil, honey (or maple syrup), ginger, and garlic in a small bowl. Set aside.
Combine the cooked, shredded chicken, mixed greens, carrots, red cabbage, green onions, and cilantro in a large bowl.
Pour about half of the dressing over the salad mixture. Toss gently to coat all ingredients evenly. Add more dressing as needed, reserving some for serving.
Divide the salad among serving plates.
