This is the dangerously good queso dip recipe that disappears fast at any gathering. It is creamy, spicy, and perfectly melty.

8 ounces cream cheese, softened
1 (10 ounce) can Rotel, undrained
1 (10 ounce) can Ro-Tel, drained
1 cup shredded Monterey Jack cheese
1 cup shredded sharp cheddar cheese
1/2 cup whole milk
1 teaspoon chili powder
1/2 teaspoon cumin
Pinch of salt
Instructions
Combine the softened cream cheese and Rotel (both drained and undrained) in a medium saucepan over medium-low heat. Stir until the cream cheese is mostly melted.
Whisk in the milk until the mixture is smooth.
Add the shredded Monterey Jack and cheddar cheeses. Stir constantly until the cheese is completely melted and the dip is smooth. Do not let it boil.
Stir in the chili powder, cumin, and salt.
Taste and adjust seasonings if necessary.
Serve immediately with your favorite chips or vegetables.
Notes
For an extra kick, add one minced jalapeño pepper with the Rotel.
If the dip thickens too much while sitting, add a splash more milk and stir to loosen it up.
This dip is best served warm, straight from the stove or kept warm in a slow cooker on the ‘warm’ setting.
