1 lb large sea scallops, patted very dry
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1/4 cup dry white wine or chicken broth
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh parsley
Salt and freshly ground black pepper to taste
Instructions
Season the scallops generously with salt and pepper.
Heat olive oil in a large skillet over medium-high heat until shimmering.
Add scallops to the hot skillet in a single layer, ensuring not to overcrowd the pan. Sear for 2-3 minutes per side, until golden brown and cooked through. Remove scallops from the skillet and set aside.
Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and cook until fragrant, about 1 minute.
Pour in white wine or chicken broth and lemon juice. Let it simmer for 1-2 minutes, scraping up any browned bits from the bottom of the pan.
Return the scallops to the skillet. Toss gently to coat them in the garlic butter sauce.
Stir in fresh parsley.
Serve immediately.
Notes
Ensure scallops are very dry for a good sear.
Do not overcook the scallops; they should be tender.
