1 pound ground beef
1 medium onion, chopped
1 (10.5 ounce) can condensed cream of chicken soup
1 (10.5 ounce) can condensed cream of mushroom soup
1 cup milk
1 cup sour cream
1 packet (1 ounce) taco seasoning mix
2 cups shredded cheddar cheese, divided
1 bag (9.25 ounces) Nacho Cheese Doritos, lightly crushed
1 cup shredded Monterey Jack cheese
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
In a large bowl, mix together the cream of chicken soup, cream of mushroom soup, milk, sour cream, and taco seasoning until smooth.
Stir in 1 cup of the cheddar cheese into the creamy mixture.
Fold the cooked ground beef and onion mixture into the sauce.
Spread half of the crushed Doritos evenly over the bottom of the prepared baking dish.
Pour the meat and sauce mixture over the chip layer.
Sprinkle the remaining 1 cup of cheddar cheese and the Monterey Jack cheese over the top of the meat mixture.
Top with the remaining crushed Doritos.
Bake for 25 to 30 minutes, or until the casserole is bubbly and the topping is lightly golden brown.
Let the casserole rest for 5 minutes before serving.
Notes
For a crispier topping, reserve half of the Doritos and sprinkle them on during the last 10 minutes of baking.
You can substitute Nacho Cheese Doritos with Cool Ranch Doritos for a different flavor profile.
