1 pound ground beef
1 medium onion, chopped
1 (10.75 ounce) can condensed cream of chicken soup
1 (10 ounce) can condensed cream of mushroom soup
1 cup milk
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups shredded cheddar cheese, divided
1 (15 ounce) can black beans, rinsed and drained
1 (4 ounce) can diced green chilies, drained
6 cups Nacho Cheese Doritos, lightly crushed
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Cook the ground beef and onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain off any excess fat.
Stir the cream of chicken soup, cream of mushroom soup, milk, chili powder, cumin, salt, and pepper into the skillet with the beef mixture. Cook until heated through, about 5 minutes.
Remove the skillet from the heat. Stir in 1 1/2 cups of the shredded cheddar cheese, the black beans, and the green chilies.
Fold in 4 cups of the crushed Doritos until they are evenly coated in the meat mixture.
Spread the mixture evenly into the prepared baking dish.
Top the casserole evenly with the remaining 2 cups of crushed Doritos and the remaining 1/2 cup of shredded cheddar cheese.
Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the topping is lightly golden.
Let the casserole rest for 5 minutes before serving.
Notes
For a spicier flavor, substitute Nacho Cheese Doritos with Spicy Sweet Chili Doritos.
You can substitute the ground beef with ground turkey or shredded cooked chicken.
If you prefer a creamier texture, add 1/2 cup of sour cream to the meat mixture before layering.
