  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1 tablespoon dried culinary lavender buds, finely crushed
  • 2 Earl Grey tea bags (about 1 tablespoon loose leaf tea), finely ground

Instructions

  1. Preheat your oven to 325 degrees F (160 degrees C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Mix in the salt, crushed lavender, and ground Earl Grey tea until evenly combined.
  4. Gradually add the flour, mixing on low speed until just combined into a soft dough. Do not overmix.
  5. Shape the dough into a log, wrap it in plastic wrap, and chill for at least 30 minutes.
  6. Slice the chilled dough into 1/2-inch thick rounds or press into a lightly floured 8-inch pan and prick the surface with a fork.
  7. Bake for 15 to 18 minutes, or until the edges are lightly golden.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

  • Grind the tea leaves and lavender finely using a spice grinder or mortar and pestle for the best flavor distribution.
  • For a lovely presentation, you can dust the cooled cookies lightly with powdered sugar.
  • You can press the dough into a pan and cut it into squares or fingers after baking if you prefer instead of forming a log.
