- 2 large eggs
- 1 tablespoon milk or water
- 1/4 cup cherry tomatoes, halved
- 1 ounce fresh mozzarella cheese, diced
- 1 teaspoon fresh basil, chopped
- Pinch of salt
- Pinch of black pepper
- Cooking spray
- Lightly spray two standard microwave-safe ramekins or large muffin cups with cooking spray.
- In a small bowl, whisk together the eggs, milk or water, salt, and pepper.
- Divide the halved cherry tomatoes and diced mozzarella evenly between the two prepared cups.
- Pour the egg mixture over the tomatoes and cheese in each cup.
- Sprinkle the chopped fresh basil over the top of the egg mixture in both cups.
- Microwave on high for 60 to 90 seconds, or until the eggs are set. Cooking time varies by microwave power.
- Let the cups cool for one minute before carefully removing them from the ramekins.
Notes
- If your eggs are not fully set after the first minute, microwave in 15-second increments until done.
- For easier removal, you can line the ramekins with small silicone liners before spraying.
- Use pre-shredded mozzarella if fresh is unavailable, but fresh melts better.
