Easy Baked Chicken Parmesan

A simple recipe for crispy, cheesy chicken parmesan baked in the oven for a quick weeknight Italian dinner.

  • 4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese, divided
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking sheet.
  2. Set up a breading station with three shallow dishes. Place flour in the first dish. Whisk eggs in the second dish. In the third dish, combine panko breadcrumbs, 1/4 cup of the Parmesan cheese, oregano, and garlic powder. Season the breadcrumb mix with salt and pepper.
  3. Dredge each chicken cutlet first in flour, shaking off excess. Dip it into the egg mixture, letting excess drip off. Finally, press the cutlet firmly into the breadcrumb mixture to coat both sides completely.
  4. Heat olive oil in a large skillet over medium heat. Sear the breaded chicken cutlets for 2 minutes per side until golden brown. You may need to do this in batches.
  5. Transfer the seared chicken to the prepared baking sheet. Spoon about 1/4 cup of marinara sauce over each cutlet.
  6. Top each piece of chicken with mozzarella cheese and the remaining 1/4 cup of Parmesan cheese.
  7. Bake for 12 to 15 minutes, or until the cheese is melted and bubbly and the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit).
  8. Serve immediately over pasta or with a side salad.

Notes

  • For extra crispy chicken, you can lightly spray the tops of the breaded cutlets with cooking spray before baking.
  • Use your favorite store-bought or homemade marinara sauce.
  • If you prefer a skillet method, cover the skillet after adding the sauce and cheese and cook on low heat until the cheese melts and the chicken is done.
