2 lbs sirloin steak, cut into 1-inch cubes
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup beef broth
1/2 cup (1 stick) unsalted butter, cut into pieces
Pat the steak cubes dry with paper towels. Toss the steak cubes in a bowl with olive oil, salt, pepper, garlic powder, and onion powder until evenly coated.
Place the seasoned steak cubes into the slow cooker insert.
Pour the beef broth over the steak.
Scatter the pieces of butter evenly over the top of the steak.
Cover the slow cooker and cook on LOW for 3 to 4 hours, or on HIGH for 1.5 to 2 hours, until the steak is tender. Do not overcook.
About 15 minutes before serving, stir in the minced garlic.
Serve the steak bites immediately, garnished with fresh parsley. These pair well over mashed potatoes or rice.
Notes
For extra flavor, you can sear the steak cubes in a hot skillet for 1-2 minutes per side before adding them to the slow cooker.
If you prefer a thicker sauce, remove the steak near the end of cooking and mix 1 tablespoon of cornstarch with 2 tablespoons of cold water, then stir this slurry into the liquid remaining in the slow cooker. Cook on high for 10 minutes until thickened.
Use sirloin, top round, or even tender chuck roast for this recipe.
