1 cup cottage cheese (full fat or low fat)
6 large eggs
1/4 cup Greek yogurt (plain, non-fat or full fat)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup shredded cheese (e.g., Monterey Jack or Gruyere)
1/2 cup cooked, crumbled bacon or diced ham
1/4 cup finely chopped spinach (optional)
Instructions
Preheat your oven to 325°F (160°C). Lightly grease a 12-cup standard muffin tin or silicone mold.
In a blender, combine the cottage cheese, eggs, Greek yogurt, salt, and pepper. Blend until the mixture is completely smooth and creamy.
Stir in the shredded cheese and your chosen mix-ins (bacon, spinach) into the blended egg mixture. Do not overmix.
Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
Place the muffin tin into a larger baking pan. Carefully pour hot water into the larger pan until the water reaches halfway up the sides of the muffin cups (this creates a water bath or bain-marie).
Bake for 20 to 25 minutes, or until the egg bites are set and a toothpick inserted near the center comes out clean.
Carefully remove the muffin tin from the water bath. Let the egg bites cool in the tin for 5 minutes before removing them.
Serve warm or store them in the refrigerator for meal prep.
Notes
For a smoother texture, strain the cottage cheese mixture through a fine-mesh sieve before adding mix-ins.
If you prefer the Instant Pot method, cook on high pressure using a natural pressure release for 8 minutes with a 1/2 cup of water in the pot.
These egg bites reheat well in the microwave in 30-second intervals.
