Make a creamy, smooth, and comforting classic baked egg custard pie using this easy, fail-proof recipe. This traditional dessert is simple to prepare and perfect for any family gathering.

Ingredients

Scale
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 2-2/3 cups whole milk
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 unbaked 9-inch pie crust
  • Ground nutmeg, for sprinkling

Instructions

  1. Preheat your oven to 350 degrees F. Place a 9-inch unbaked pie crust into a pie plate.
  2. In a medium bowl, whisk the eggs lightly. Do not over-beat the eggs; you want to avoid incorporating too much air for a smooth custard.
  3. Whisk in the sugar, salt, and vanilla extract until the sugar begins to dissolve.
  4. Slowly pour in the milk while continuing to whisk gently until everything is just combined. This gentle mixing helps prevent bubbles.
  5. Pour the liquid custard mixture into the unbaked pie crust.
  6. Sprinkle the top lightly with ground nutmeg. This adds classic flavor.
  7. Bake for 40 to 50 minutes. The custard is done when the edges are set, and the center has only a slight jiggle when you gently shake the pan. A knife inserted near the edge should come out clean.
  8. Remove the pie from the oven and cool completely on a wire rack. The center will continue to set as it cools.
  9. Chill the egg custard pie for at least 2 hours before slicing and serving for the best, creamiest texture.

Notes

  • For a truly smooth custard, strain the liquid mixture through a fine-mesh sieve into the pie shell before baking. This removes any chalazae or unmixed bits.
  • To prevent the crust edges from browning too quickly, cover them loosely with aluminum foil halfway through the baking time.
  • This recipe uses whole milk for the richest flavor, but you can substitute 2% milk if you prefer a slightly lighter result.
