Prepare this simple, high-protein egg bake the night before for a quick, satisfying breakfast or brunch casserole.

  • 1 pound breakfast sausage, cooked and drained
  • 2 cups frozen shredded hash browns, thawed
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 10 large eggs
  • 1 cup milk (any type)
  • 1/2 cup cottage cheese (optional, for extra protein)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Spread the cooked sausage evenly over the bottom of the prepared dish.
  3. Distribute the thawed hash browns over the sausage layer.
  4. Sprinkle both the cheddar and Monterey Jack cheeses over the hash browns.
  5. In a separate bowl, whisk together the eggs, milk, cottage cheese (if using), salt, and pepper until well combined.
  6. Pour the egg mixture evenly over the ingredients in the baking dish.
  7. Cover the dish tightly with plastic wrap or foil. Refrigerate for at least 4 hours, or preferably overnight.
  8. When ready to bake, preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Remove the plastic wrap.
  9. Bake uncovered for 35 to 45 minutes, or until the center is set and a knife inserted near the middle comes out clean.
  10. Let the bake rest for 5 minutes before slicing and serving.

Notes

  • For a gluten-free option, confirm your hash browns do not contain wheat fillers.
  • You can substitute bacon or ham for the sausage.
  • If you skip the overnight refrigeration, let the assembled bake sit at room temperature for 30 minutes before baking.
