1.5 lbs boneless, skinless chicken breasts or thighs
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 (16 ounce) jar salsa verde (medium heat recommended)
1/2 cup chicken broth
4 ounces cream cheese, cut into cubes
1/2 cup sour cream or heavy cream
1 teaspoon ground cumin
1/2 teaspoon chili powder
Salt and black pepper to taste
1/4 cup fresh cilantro, chopped (for garnish)
Instructions
Season the chicken pieces lightly with salt and pepper.
Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and sear for 3-4 minutes per side until lightly browned. Remove the chicken and set it aside.
Reduce the heat to medium. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic, cumin, and chili powder, and cook for 1 minute until fragrant.
Pour in the salsa verde and chicken broth. Stir well, scraping up any browned bits from the bottom of the pot.
Return the seared chicken to the pot. Bring the mixture to a simmer, then cover the pot, reduce the heat to low, and cook for 15-20 minutes, or until the chicken is cooked through (internal temperature reaches 165°F).
Remove the lid. Add the cubed cream cheese to the sauce and stir continuously until it melts completely and the sauce thickens slightly.
Stir in the sour cream or heavy cream until the sauce is smooth and creamy. Do not boil the sauce after adding the cream.
Taste the sauce and adjust seasoning with salt and pepper if needed.
Serve the chicken topped with the creamy salsa verde sauce and garnish with fresh cilantro.
Notes
Serve this dish over white rice, brown rice, or with warm tortillas for a complete meal.
For extra flavor, you can add one 4-ounce can of diced green chiles along with the salsa verde.
If you prefer a thicker sauce without adding extra dairy, let the sauce simmer uncovered for an extra 5 minutes before adding the cream cheese.
