Make a large, fluffy pancake with a crunchy streusel topping directly on a sheet pan for easy preparation and minimal cleanup.

  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1 large egg
  • 1/4 cup melted butter, plus more for the pan
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1/2 cup all-purpose flour (for streusel)
  • 1/4 cup packed brown sugar (for streusel)
  • 1/4 cup cold unsalted butter, cut into small pieces (for streusel)
  • 1/2 teaspoon ground cinnamon (for streusel)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Grease a 13×9 inch baking sheet well with butter or line it with parchment paper.
  2. In a large bowl, whisk together the 1 1/2 cups flour, 2 tablespoons granulated sugar, baking powder, and salt.
  3. In a separate bowl, whisk the milk, egg, 1/4 cup melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix. A few lumps are fine.
  5. Pour the batter onto the prepared sheet pan and spread it evenly. Sprinkle the blueberries over the batter.
  6. Prepare the streusel: In a small bowl, combine the 1/2 cup flour, brown sugar, and cinnamon. Cut in the cold butter pieces using your fingers or a pastry blender until the mixture resembles coarse crumbs.
  7. Sprinkle the streusel topping evenly over the blueberries and batter.
  8. Bake for 18 to 22 minutes, or until the pancake is set in the center and the streusel is golden brown.
  9. Let it cool slightly on the pan before slicing into squares. Serve warm.

Notes

  • For easy removal, use parchment paper that hangs over the sides of the sheet pan.
  • If using frozen blueberries, do not thaw them before adding them to the batter.
  • This recipe works well for make-ahead breakfasts; reheat slices in the toaster or oven.
