Prepare a simple, fresh salad featuring strawberries and avocado, topped with a bright citrus vinaigrette.

Ingredients

  • 4 cups mixed greens
  • 1 pint fresh strawberries, hulled and sliced
  • 1 large ripe avocado, diced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons poppy seeds
  • For the Vinaigrette:
  • 1/4 cup fresh orange juice
  • 2 tablespoons fresh lime juice
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Prepare the vinaigrette: In a small bowl, whisk together the orange juice, lime juice, olive oil, honey, and Dijon mustard until combined. Season with salt and pepper. Set aside.
  2. In a large bowl, combine the mixed greens, sliced strawberries, diced avocado, and sliced red onion.
  3. Just before serving, drizzle the citrus vinaigrette over the salad ingredients.
  4. Gently toss the salad to coat everything evenly.
  5. Sprinkle the poppy seeds over the salad before serving.

Notes

  • You can substitute spinach for mixed greens if you prefer a stronger flavor.
  • For a crunchier texture, add 1/4 cup of toasted pecans or slivered almonds.
  • Make the vinaigrette up to one day ahead and store it in the refrigerator. Shake well before using.
