1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons unsalted butter, melted
16 ounces cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
2 large eggs
1/2 cup eggnog
1/4 cup heavy cream
Whipped cream and extra nutmeg for topping (optional)
Instructions
Preheat your oven to 350 degrees F. Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
Combine graham cracker crumbs and 1/4 cup sugar in a bowl. Pour in melted butter and mix until the crumbs are evenly moistened.
Press the crumb mixture firmly into the bottom of the prepared pan. Bake the crust for 10 minutes. Let it cool slightly.
In a large bowl, beat the softened cream cheese and 1 cup sugar with an electric mixer until smooth.
Mix in vanilla extract, nutmeg, and cinnamon. Beat in the eggs one at a time, mixing just until combined after each addition.
Gently stir in the eggnog and heavy cream until the batter is uniform. Do not overmix.
Pour the cheesecake batter over the cooled crust.
Bake for 30 to 35 minutes, or until the edges are set and the center has a slight jiggle.
Turn off the oven and prop the door open slightly. Let the bars cool in the oven for 30 minutes.
Remove the pan from the oven and cool completely on a wire rack.
Refrigerate the bars for at least 4 hours, or preferably overnight, before cutting into squares.
Serve chilled, topped with whipped cream and a dusting of fresh nutmeg if desired.
Notes
For cleaner cuts, chill the bars thoroughly before slicing.
