12 large jalapeños
8 ounces cream cheese, softened
4 ounces shredded sharp cheddar cheese
2 tablespoons finely chopped green onions
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 cup panko breadcrumbs
2 tablespoons melted butter
1/4 cup finely crushed tortilla chips
Instructions
Preheat your oven to 400 degrees F. Line a baking sheet with parchment paper.
Slice the jalapeños in half lengthwise. Use a small spoon to carefully scrape out the seeds and membranes. Wear gloves for this step.
In a medium bowl, combine the softened cream cheese, cheddar cheese, green onions, smoked paprika, and garlic powder. Mix until smooth and fully incorporated.
Spoon or pipe the cheese mixture evenly into the jalapeño halves. Do not overfill.
In a small bowl, mix the panko breadcrumbs and crushed tortilla chips together.
Brush the tops of the filled jalapeños lightly with melted butter.
Sprinkle the breadcrumb mixture over the tops of the cheese filling. Press gently so they adhere.
Place the poppers on the prepared baking sheet.
Bake for 15 to 20 minutes, or until the jalapeños are tender and the topping is golden brown and bubbly.
Let cool slightly before serving.
Notes
Wear gloves when handling jalapeños to avoid skin irritation.
For extra heat, leave some of the white membrane inside the jalapeño.
You can make the cheese filling a day ahead and store it covered in the refrigerator.
