1 lb ground meat (beef, pork, or a mix)
1/2 cup breadcrumbs
1 large egg
1/4 cup milk
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup sweet chili sauce
1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon sriracha (or more, for extra heat)
1 tablespoon brown sugar
1 teaspoon grated fresh ginger
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, gently combine the ground meat, breadcrumbs, egg, milk, garlic powder, onion powder, salt, and pepper. Do not overmix.
Roll the mixture into uniform, one-inch meatballs. Place them on the prepared baking sheet.
Bake the meatballs for 15-18 minutes, or until cooked through.
While the meatballs bake, prepare the sauce. In a small saucepan, whisk together the sweet chili sauce, soy sauce, rice vinegar, sriracha, brown sugar, and ginger.
Bring the sauce to a simmer over medium heat. Cook for 2-3 minutes, stirring constantly, until the sugar dissolves and the sauce thickens slightly.
Remove the baked meatballs from the oven.
Add the hot meatballs to the saucepan with the sauce. Toss gently until every meatball is fully coated.
Serve immediately over rice or with toothpicks for appetizers.
Notes
For a deeper flavor, you can brown the meatballs in a skillet before baking.
