1 teaspoon active dry yeast
1 teaspoon granulated sugar
1 cup warm water (105-115°F)
2 1/2 cups all-purpose flour, plus more for dusting
1 teaspoon salt
2 tablespoons unsalted butter, melted, plus more for brushing
Instructions
In a small bowl, combine the yeast, sugar, and warm water. Let it sit for 5-10 minutes until foamy.
In a large bowl, whisk together the flour and salt.
Pour the yeast mixture and the melted butter into the flour mixture.
Stir with a spoon until just combined and a shaggy dough forms.
Cover the bowl with plastic wrap and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
Gently punch down the dough.
Turn the dough out onto a lightly floured surface. Divide the dough into 8 equal portions.
Shape each portion into a round ball and place them on a baking sheet lined with parchment paper, leaving some space between each roll.
Cover the rolls loosely with plastic wrap and let them rise for another 30-45 minutes.
Preheat your oven to 375°F (190°C).
Bake the rolls for 15-20 minutes, or until golden brown.
Brush the tops of the warm rolls with melted butter.

Ensure your water is warm, not hot, to activate the yeast properly.
Don’t overwork the dough; the ‘no-knead’ method relies on time for gluten development.
A warm, draft-free spot is ideal for rising, like a slightly warm oven that has been turned off.
