  • ½ cup pumpkin purée
  • 1 large egg

  • Maple syrup, for serving

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, pumpkin pie spice, cinnamon, and salt.
  2. In a separate medium bowl, whisk together the milk, pumpkin purée, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients. Stir until just combined. A few lumps are fine. Do not overmix.
  4. Heat a lightly oiled griddle or large non-stick skillet over medium heat.
  5. Pour ¼ cup of batter for each pancake onto the hot griddle.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. Serve immediately with maple syrup and whipped cream, if desired.

Notes

  • Do not overmix the batter. Overmixing develops the gluten, leading to tough pancakes.
  • Adjust the amount of pumpkin pie spice to your liking.
  • If the batter is too thick, add a tablespoon or two of milk until it reaches your desired consistency.
