Make mornings easy with homemade freezer breakfast burritos. These burritos have eggs, meat, and vegetables. Prepare them ahead, freeze, then grab and reheat for a quick, protein-rich breakfast.

  • 8 large flour tortillas (burrito size)
  • 1 tablespoon olive oil
  • 1 pound breakfast sausage, bacon, or diced ham
  • 1 onion, diced
  • 1 bell pepper, diced (any color)
  • 10 large eggs
  • 1/4 cup milk
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1/2 cup cooked black beans (optional)
  • 1/2 cup cooked corn (optional)
  • Salsa or hot sauce for serving (optional)

Instructions

  1. Cook your chosen meat in a large skillet over medium heat until browned. Drain any excess fat.
  2. Add the diced onion and bell pepper to the skillet with the meat. Cook until softened, about 5-7 minutes. Remove the mixture from the skillet and set aside.
  3. In a large bowl, whisk the eggs with milk, salt, and pepper until well combined.
  4. Heat the same skillet over medium-low heat. Pour in the egg mixture and scramble until cooked through but still soft.
  5. Lay out the tortillas on a clean surface. Divide the meat and vegetable mixture evenly among the tortillas.
  6. Next, divide the scrambled eggs evenly among the tortillas, placing them on top of the meat and vegetable mixture.
  7. Sprinkle each burrito with shredded cheese. If using, add black beans and corn.
  8. Fold the sides of each tortilla inward, then tightly roll from the bottom up to create a compact burrito.
  9. To freeze, wrap each burrito tightly in plastic wrap, then an additional layer of aluminum foil. Label with the date.
  10. Store the wrapped burritos in a freezer-safe bag or container in the freezer for up to 3 months.
  11. To reheat from frozen, remove the foil and plastic wrap. Wrap the burrito in a damp paper towel and microwave for 2-3 minutes, flipping halfway through, or until heated through. Alternatively, bake in a preheated oven at 350°F (175°C) for 20-30 minutes, or until heated through.
  12. Serve with salsa or hot sauce, if desired.
