Make this simple fruit pizza using refrigerated sugar cookie dough for a quick, delicious dessert topped with sweet cream cheese frosting and fresh fruit.
4 cups mixed fresh fruit (such as strawberries, blueberries, kiwi, mandarin oranges)
Instructions
Preheat your oven to 350 degrees Fahrenheit.
Press the refrigerated sugar cookie dough evenly onto a 12-inch pizza pan or a large baking sheet lined with parchment paper.
Bake the cookie crust for 12 to 15 minutes, or until the edges are lightly golden brown. You want it set but not overly dark.
Remove the crust from the oven and let it cool completely on the pan. This step is important for the frosting.
While the crust cools, prepare the cream cheese frosting. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
Add the milk one tablespoon at a time until the frosting reaches a spreadable consistency.
Once the cookie crust is cool, spread the cream cheese frosting evenly over the entire surface, leaving a small border if you like a crust edge.
Arrange your mixed fresh fruit decoratively over the frosting. You can create patterns or simply scatter the fruit.
Chill the fruit pizza for at least 30 minutes before slicing and serving. This helps the frosting set up nicely.
Notes
For mini fruit pizzas, press small amounts of dough onto a baking sheet and bake according to package directions, then frost and top individually.
If you want a slightly tangier frosting, add 1 tablespoon of lemon juice to the cream cheese mixture.
Use fruits that are in season for the best flavor. Pat any very wet fruit, like sliced peaches, lightly with a paper towel before placing them on the frosting.
