  • For the Cake:
  • 8 ounces unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk
  • For the Mirror Glaze:
  • 2 cups granulated sugar
  • 2/3 cup water
  • 1 1/2 cups sweetened condensed milk
  • 2 tablespoons gelatin powder
  • 1/2 cup cold water
  • 1 teaspoon vanilla extract
  • Food coloring (black, blue, purple, pink, white)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch cake pans.
  2. In a large bowl, cream together softened butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Add half of the dry ingredients to the butter mixture, then half of the buttermilk. Mix until just combined. Repeat with the remaining dry ingredients and buttermilk.
  6. Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool in pans for 10 minutes before inverting onto a wire rack to cool completely.
  7. While the cakes cool, prepare the mirror glaze. In a medium saucepan, combine sugar and 2/3 cup water. Heat over medium heat, stirring until sugar dissolves.
  8. Remove from heat and stir in sweetened condensed milk.
  9. In a small bowl, sprinkle gelatin powder over 1/2 cup cold water and let it bloom for 5 minutes.
  10. Add the bloomed gelatin to the warm glaze mixture and stir until dissolved. Add vanilla extract.
  11. Strain the glaze into a heatproof container. Divide the glaze into separate containers for each color.
  12. Add food coloring to each container (black, blue, purple, pink, white), leaving one portion white.
  13. Once the cakes are completely cooled and stacked, place them on a wire rack set over a baking sheet.
  14. Pour the colored glazes over the cake, alternating colors and allowing them to drip down the sides. Start with darker colors and finish with white for a galaxy effect.
  15. Let the glaze set for at least 15 minutes before serving.

  • For a smoother glaze, let it cool to around 90-95°F (32-35°C) before pouring.
