  • 1 pound carrots, peeled and trimmed
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Place the trimmed carrots on a large baking sheet.
  3. Drizzle the carrots with olive oil and toss to coat evenly.
  4. Roast for 20 minutes, stirring halfway through.
  5. While the carrots roast, melt the butter in a small saucepan over low heat.
  6. Add the minced garlic to the melted butter and cook for about 1 minute until fragrant. Do not let the garlic brown.
  7. Remove the carrots from the oven. Pour the garlic butter mixture over the hot carrots.
  8. Toss the carrots gently to coat them completely with the garlic butter.
  9. Sprinkle with salt and pepper.
  10. Return the carrots to the oven and roast for another 10 to 15 minutes, or until the edges are nicely caramelized and tender.

  • Choose carrots of similar size for even roasting.
  • If your carrots are very thick, cut them in half lengthwise after peeling.
