  • 1 pound (450g) large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/2 cup (113g) unsalted butter
  • 1/4 cup (60ml) dry white wine or chicken broth
  • 1/4 cup (60ml) fresh lemon juice
  • 1/4 cup (15g) fresh parsley, chopped
  • Salt and black pepper to taste
  • Red pepper flakes, optional, for a touch of heat

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the linguine and cook according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. Sauté the shrimp: While the pasta cooks, heat olive oil in a large skillet or pan over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes per side, or until pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Make the garlic butter sauce: In the same skillet, reduce the heat to medium. Add the butter and minced garlic. Cook for 1-2 minutes, stirring constantly, until the garlic is fragrant but not browned.
  4. Deglaze and season: Pour in the white wine or chicken broth and lemon juice. Bring to a gentle simmer and cook for 2-3 minutes, allowing the sauce to reduce slightly. Season with salt, black pepper, and red pepper flakes if using.
  5. Combine and finish: Add the cooked pasta to the skillet with the sauce. Toss to coat. Return the cooked shrimp to the skillet and add the fresh parsley. If the sauce is too thick, add a splash of reserved pasta water until it reaches your desired consistency.
  6. Serve immediately: Toss everything together gently and serve hot.

Notes

  • For extra flavor, you can marinate the shrimp in a little olive oil, salt, pepper, and a pinch of garlic powder for 15 minutes before cooking.
  • If you don’t have fresh parsley, dried parsley can be used, but use about half the amount.
