1.5 lbs sirloin steak, cut into 1-inch cubes
1.5 lbs baby potatoes, halved or quartered
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 cup beef broth
1/4 cup chopped fresh parsley
Salt and freshly ground black pepper to taste
Instructions
Season the steak cubes generously with salt and pepper.
In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the steak cubes in a single layer and sear for 1-2 minutes per side, until browned. Remove steak from the skillet and set aside.
Add the remaining 2 tablespoons of butter to the skillet. Add the potatoes and cook, stirring occasionally, for 10-12 minutes, or until tender and browned.
Add the minced garlic to the skillet and cook for 1 minute until fragrant.
Pour in the beef broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
Return the steak bites to the skillet. Stir to combine and cook for another 2-3 minutes, until the steak is heated through and the sauce has thickened slightly.
Stir in the fresh parsley. Season with additional salt and pepper if needed.
Serve immediately.
Notes
For crispier potatoes, you can parboil them for 5-7 minutes before adding them to the skillet.
Feel free to add other vegetables like broccoli florets or bell peppers along with the potatoes.
A squeeze of lemon juice at the end can add a bright finish.
