  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1.5 lbs baby potatoes, halved or quartered
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Toss the potatoes with half the olive oil, salt, and pepper.
  2. Heat half the butter and remaining olive oil in a large skillet over medium-high heat.
  3. Add the potatoes to the skillet in a single layer. Cook for 10-12 minutes, turning occasionally, until golden brown and tender. Remove potatoes and set aside.
  4. Pat the steak cubes dry with paper towels. Season them with the remaining salt, pepper, and Italian seasoning.
  5. Add the remaining butter to the same skillet. Add the minced garlic and cook for 30 seconds until fragrant.
  6. Add the steak cubes to the skillet, ensuring not to overcrowd the pan. Sear for 2-3 minutes per side for medium-rare.
  7. Return the cooked potatoes to the skillet with the steak. Toss everything gently to coat in the garlic butter sauce.
  8. Cook for 1 more minute until heated through.
  9. Remove from heat. Garnish with fresh parsley before serving immediately.
