1.5 lbs sirloin or tenderloin steak, cut into 1-inch cubes
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
4 tablespoons unsalted butter
4 cloves garlic, minced
1/4 cup beef broth
1 tablespoon fresh parsley, chopped
Instructions
Pat the steak cubes dry with paper towels. Season them evenly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat until shimmering.
Add the steak cubes to the skillet in a single layer, avoiding overcrowding. Sear for 2-3 minutes per side until browned. You may need to work in batches.
Remove the seared steak from the skillet and set aside.
Reduce the heat to medium. Add the unsalted butter to the same skillet. Let it melt completely.
Add the minced garlic to the butter. Cook for about 1 minute until fragrant. Do not let the garlic burn.
Pour in the beef broth. Scrape up any browned bits from the bottom of the pan using a wooden spoon. This adds flavor.
Return the steak tips to the skillet. Toss gently to coat them in the garlic butter sauce. Cook for 1-2 minutes until the sauce slightly thickens.
Remove the skillet from the heat. Stir in the fresh parsley.
