2 medium zucchini, spiralized or peeled into ribbons
2 tablespoons unsalted butter
3 cloves garlic, minced
1/4 cup fresh parsley, chopped
Salt to taste
Black pepper to taste
Instructions
Prepare the zucchini: Use a spiralizer to create noodles from the zucchini. If you do not have a spiralizer, use a vegetable peeler to create wide ribbons.
Melt butter: In a large skillet, melt the unsalted butter over medium heat.
Sauté garlic: Add the minced garlic to the skillet and sauté for 1 minute until fragrant. Do not let it brown.
Add zucchini: Add the zucchini noodles or ribbons to the skillet. Toss gently to coat with the garlic butter.
Cook briefly: Cook for 2-3 minutes, tossing occasionally, until the zucchini is tender-crisp. Do not overcook, or it will become watery.
Season: Remove from heat. Stir in the fresh chopped parsley. Season with salt and black pepper to taste.
Serve: Serve immediately as a side dish or a light meal.
Notes
For firmer zoodles, pat them dry with a paper towel before cooking to remove excess moisture.
You can add a squeeze of lemon juice at the end for extra brightness.
Feel free to add grilled chicken or shrimp for a more complete meal.
