  • 1 pound large shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1 pound green beans, trimmed
  • 1/2 cup full-fat coconut milk
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon fresh lime juice
  • Salt and pepper to taste

Instructions

  1. Heat coconut oil in a large skillet or wok over medium-high heat.
  2. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from the skillet and set aside.
  3. Add minced garlic to the skillet and sauté for 30 seconds until fragrant.
  4. Add green beans and stir-fry for 5-7 minutes, until tender-crisp.
  5. Pour in coconut milk, soy sauce, and lime juice. Bring to a simmer and cook for 2 minutes, stirring occasionally.
  6. Return shrimp to the skillet and toss to coat. Cook for 1-2 minutes more, until heated through.
