  • 1 head garlic
  • 1/2 cup olive oil
  • 1 pound spaghetti
  • 1/4 cup reserved pasta water
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Red pepper flakes (optional)

Instructions

  1. Preheat your oven to 250°F (120°C).
  2. Cut off the top 1/4 inch of the garlic head, exposing the cloves.
  3. Place the garlic head in a small oven-safe dish and pour the olive oil over it.
  4. Cover the dish with foil and bake for 1.5 to 2 hours, or until the garlic is soft and golden.
  5. Remove from oven and let cool slightly. Squeeze the softened garlic cloves out of their skins into a bowl.
  6. Mash the garlic cloves with a fork to create a paste.
  7. Cook spaghetti according to package directions in salted boiling water. Reserve about 1/4 cup of pasta water before draining.
  8. While pasta cooks, heat the garlic confit (oil and mashed garlic) in a large skillet over medium-low heat.
  9. Add the drained spaghetti to the skillet with the garlic confit.
  10. Toss well to coat the pasta. Add reserved pasta water a tablespoon at a time if needed to create a light sauce.
  11. Season with salt and black pepper to taste. Add red pepper flakes if desired.
  12. Serve immediately, garnished with fresh chopped parsley.
