  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese, plus more for topping
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Carefully cut the spaghetti squash in half lengthwise. Scoop out and discard the seeds.
  3. Place the squash halves cut-side down on a baking sheet. Roast for 30 to 40 minutes, or until the squash is tender when pierced with a fork.
  4. Remove the squash from the oven and let it cool slightly. Use a fork to scrape out the flesh, creating spaghetti-like strands.
  5. While the squash roasts, melt the butter in a small skillet over medium heat.
  6. Add the minced garlic to the butter. Cook for about 1 minute until fragrant. Do not let the garlic brown.
  7. Add the squash strands to the skillet. Toss well to coat them with the garlic butter.
  8. Remove the skillet from the heat. Stir in the Parmesan cheese, salt, and pepper until the cheese melts and coats the squash evenly.
  9. Serve immediately. Top with fresh parsley and extra Parmesan cheese.
