  • 1/2 teaspoon vanilla extract
  • 1 cup graham cracker crumbs
  • 1 cup white chocolate chips
  • 1 tablespoon vegetable shortening (optional, for smoother melting)
  • 1/4 cup gingerbread cookie crumbs, for rolling (optional)

Instructions

  1. In a large bowl, beat the softened cream cheese and butter until smooth and creamy.
  2. Add the powdered sugar, gingerbread spice blend, ground ginger, cinnamon, cloves, and vanilla extract. Beat until well combined and fluffy.
  3. Stir in the graham cracker crumbs until fully incorporated. The mixture will be thick.
  4. Chill the mixture in the refrigerator for at least 30 minutes, or until firm enough to roll.
  5. Roll the chilled mixture into small balls, about 1-inch in diameter. Place them on a baking sheet lined with parchment paper.
  6. If desired, roll the truffle balls in crushed gingerbread cookie crumbs for extra flavor and texture.
  7. Melt the white chocolate chips with the vegetable shortening (if using) in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth. Alternatively, melt using a double boiler.
