Ingredients
Scale
1 cup unsweetened almond milk
1 scoop vanilla or unflavored protein powder
1/2 cup frozen cauliflower florets (for creaminess)
1/4 cup strong brewed and cooled coffee
1 tablespoon molasses
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
Pinch of ground nutmeg
1/2 teaspoon vanilla extract
4-5 ice cubes (optional, for thicker texture)
Instructions
Place all ingredients into a high-speed blender.
Secure the lid tightly.
Blend on high until the mixture is completely smooth and creamy. You may need to stop and scrape down the sides.
If the smoothie is too thick, add a splash more almond milk and blend again.
Pour immediately into your favorite glass.
Sip and enjoy your gingerbread coffee treat.
Notes
For extra sweetness, add 1 pitted Medjool date before blending.
If you prefer a colder coffee base, use cold brew concentrate instead of brewed coffee.
You can substitute frozen zucchini for the frozen cauliflower if you prefer a milder vegetable taste.
