Make rich, fudgy brownies with a creamy peanut butter swirl. This recipe uses gluten-free ingredients for a decadent dessert.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 3/4 cups granulated sugar
  • 3/4 cup packed light brown sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup gluten-free all-purpose flour blend (with xanthan gum)
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup semi-sweet chocolate chips
  • 1 cup creamy peanut butter
  • 1/4 cup powdered sugar
  • 1 large egg (for peanut butter swirl)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until combined.
  3. Beat in the 4 large eggs one at a time, then stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the gluten-free flour blend, cocoa powder, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Stir in the chocolate chips.
  6. Prepare the peanut butter swirl mixture: In a small bowl, beat together the peanut butter, powdered sugar, and the remaining 1 large egg until smooth.
  7. Pour half of the brownie batter into the prepared pan and spread evenly.
  8. Dollop spoonfuls of the peanut butter mixture over the batter. Pour the remaining brownie batter over the top.
  9. Use a knife or skewer to gently swirl the peanut butter mixture into the chocolate batter. Do not over-swirl; aim for distinct ribbons.
  10. Bake for 30 to 35 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached, not wet batter.
  11. Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment overhang and cutting them into squares.

Notes

  • Use a gluten-free flour blend that already contains xanthan gum for the best fudgy texture.
  • For cleaner swirls, chill the peanut butter mixture slightly before using it.
  • Do not overbake; these brownies are best when slightly underdone for a fudgy center.
