1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
1 tablespoon olive oil
1 large yellow onion, chopped
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 teaspoons ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon cayenne pepper (adjust to your heat preference)
1 (14.5 ounce) can diced tomatoes, undrained
1 (13.5 ounce) can full-fat coconut milk
1 cup chicken broth
1 teaspoon salt
1/2 teaspoon black pepper
Fresh cilantro, chopped (for garnish)
Cooked rice or naan, for serving
Instructions
Season the chicken pieces with salt and pepper.
Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the chopped onion and cook until softened, about 5 minutes.
Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.
Add the turmeric, cumin, coriander, and cayenne pepper. Toast the spices for 30 seconds, stirring constantly.
Add the diced tomatoes, coconut milk, and chicken broth to the pot. Stir well to combine.
Bring the mixture to a simmer.
Add the seasoned chicken to the curry. Reduce heat to low, cover, and let it simmer for 20-25 minutes, or until the chicken is cooked through and tender.
Taste and adjust salt and pepper as needed.
Serve the curry hot over rice or with naan bread. Garnish generously with fresh cilantro.
Notes
For a deeper flavor, let the curry simmer for 30 minutes. Elias likes to let the flavors meld slowly.
If you prefer a thicker curry, remove the lid for the last 10 minutes of cooking.
You can substitute chicken breasts for thighs, but adjust the cooking time slightly to prevent drying out.
