Prepare a protein-packed, edible cookie dough using Greek yogurt instead of butter for a healthier snack.

  • 1 cup plain Greek yogurt, full fat or 2%
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour, heat-treated
  • 1/2 cup mini chocolate chips

Instructions

  1. Heat treat the flour: Spread the flour on a microwave-safe plate and microwave in 30-second intervals, stirring between each, until it reaches 165°F (74°C). Let it cool completely.
  2. In a medium bowl, combine the Greek yogurt, brown sugar, granulated sugar, vanilla extract, and salt. Mix until smooth.
  3. Gradually mix in the cooled, heat-treated flour until just combined. Do not overmix.
  4. Fold in the mini chocolate chips.
  5. Serve immediately or chill for 30 minutes for a firmer texture.

Notes

  • Heat treating the flour removes potential bacteria, making the dough safe to eat raw.
  • Use full-fat Greek yogurt for the best texture, as lower fat versions can make the dough too thin.
  • If the dough seems too wet after mixing, add one tablespoon of extra heat-treated flour at a time until the desired consistency is reached.
