  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 3/4 cup milk (any kind)
  • 1/2 cup plain Greek yogurt (full-fat or 2%)
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter or oil, plus more for the griddle

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. This mixes the dry ingredients well.
  2. In a separate large bowl, whisk the egg, milk, Greek yogurt, sugar, and vanilla extract until smooth. The yogurt should be mostly incorporated.
  3. Gently fold the dry ingredients into the wet ingredients using a spatula. Mix only until just combined; a few lumps are fine. Overmixing develops gluten and makes the pancakes tough.
  4. Stir in the melted butter or oil.
  5. Heat a lightly oiled griddle or large non-stick skillet over medium heat. You know it is ready when a drop of water sizzles immediately.
  6. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  7. Cook for 2 to 3 minutes per side, until bubbles appear on the surface and the edges look set. Flip and cook the second side until golden brown.
  8. Serve immediately with your favorite toppings.
