  • 1.5 pounds fresh green beans, trimmed
  • 1 tablespoon olive oil
  • 1 pound cremini mushrooms, sliced
  • 1 large yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 cup fried onions (store-bought or homemade)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Blanch the green beans in boiling salted water for 5-7 minutes until tender-crisp. Drain and set aside.
  3. In a large oven-safe skillet, heat olive oil over medium heat. Add the sliced mushrooms and cook until browned, about 5-7 minutes. Remove mushrooms from the skillet and set aside.
  4. Add the thinly sliced onion to the same skillet and cook until softened and lightly browned, about 10-12 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  5. Sprinkle the flour over the onions and garlic. Stir and cook for 1-2 minutes to toast the flour.
  6. Gradually whisk in the milk and heavy cream until smooth. Bring to a simmer, stirring constantly, until the sauce thickens, about 5 minutes.
  7. Stir in the salt, pepper, and nutmeg. Return the cooked green beans and mushrooms to the skillet. Stir to combine with the sauce.
  8. Top the casserole evenly with the fried onions.
  9. Bake for 20-25 minutes, or until bubbly and the topping is golden brown.
  10. Let stand for 5 minutes before serving.

  • For homemade fried onions, slice them thinly, toss with a little flour, and fry in oil until golden brown. Drain on paper towels.
