Ingredients

Scale
  • 1 cup strong brewed green tea, cooled
  • 1/4 cup granulated sugar
  • 2 tablespoons matcha powder
  • 12-16 ladyfingers
  • 8 ounces mascarpone cheese, softened
  • 2 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Unsweetened cocoa powder, for dusting

Instructions

  1. In a shallow dish, whisk together the cooled green tea, 1/4 cup sugar, and matcha powder until smooth.
  2. Quickly dip each ladyfinger into the matcha mixture, coating both sides. Arrange the dipped ladyfingers in a single layer in the bottom of an 8×8 inch baking dish.
  3. In a medium bowl, beat the mascarpone cheese until creamy.
  4. In a separate bowl, whisk together the egg yolks, 1/4 cup sugar, and vanilla extract until pale and thick.
  5. Gently fold the egg yolk mixture into the mascarpone cheese until well combined.
  6. In another clean bowl, beat the egg whites until stiff peaks form.
  7. Gently fold the beaten egg whites into the mascarpone mixture until no streaks remain.
  8. Spread half of the mascarpone mixture evenly over the ladyfingers.
  9. Repeat the layer of dipped ladyfingers, followed by the remaining mascarpone mixture.
  10. Cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
  11. Before serving, dust the top generously with unsweetened cocoa powder.

Notes

  • Ensure your green tea is brewed strong for a more intense matcha flavor.
  • Adjust the amount of matcha powder to your preference.
  • For a richer flavor, you can add a splash of a complementary liqueur to the green tea mixture, such as sake or white rum.
