1 lb ground lamb or beef
1/2 cup finely chopped onion
1/4 cup finely chopped fresh parsley
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper (optional)
Salt and black pepper to taste
4-6 pita breads, preferably thick
2 tablespoons olive oil
1 large cucumber, peeled and diced
1 cup plain Greek yogurt
1 clove garlic, minced (for salad)
1 tablespoon fresh mint, chopped (for salad)
1 tablespoon lemon juice (for salad)
Salt to taste (for salad)
Instructions
In a large bowl, combine ground meat, chopped onion, parsley, minced garlic, cumin, coriander, cayenne pepper (if using), salt, and black pepper. Mix until well combined.
Cut each pita bread in half to create pockets. Carefully stuff each pita half with the meat mixture, spreading it evenly inside.
Brush both sides of the stuffed pita breads with olive oil.
Preheat your grill to medium-high heat. Place the stuffed pitas on the grill.
Grill for 4-6 minutes per side, or until the meat is cooked through and the pita is golden brown and crispy.
While the arayes are grilling, prepare the cucumber salad. In a medium bowl, combine diced cucumber, Greek yogurt, minced garlic, chopped fresh mint, lemon juice, and salt. Mix well.
Remove the grilled arayes from the grill and let them rest for a few minutes.
Cut the arayes into quarters or wedges. Serve immediately with the creamy cucumber salad.
Notes
For extra flavor, you can add a pinch of sumac to the meat mixture.
If you do not have a grill, you can cook the arayes in a pan on the stovetop over medium heat until the meat is cooked and the pita is golden.
Adjust the amount of cayenne pepper to your spice preference.
