Hawaiian Grilled Chicken Skewers feature tender chicken and sweet pineapple marinated in a tangy-sweet teriyaki sauce, then grilled to perfection. These charred, juicy kabobs offer a tropical flair.

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 fresh pineapple, cored and cut into 1-inch chunks
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. In a medium bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, grated ginger, and black pepper to create the marinade.
  2. Add the chicken pieces to the marinade, ensuring all pieces are well coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, for best flavor.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
  4. Preheat your grill to medium-high heat.
  5. Thread the marinated chicken and pineapple chunks alternately onto the skewers.
  6. Place the skewers on the hot grill. Grill for 8-12 minutes, turning occasionally, until the chicken is cooked through and has nice char marks.
  7. Remove the skewers from the grill and let them rest for a few minutes before serving.

Notes

  • For an extra pop of flavor, brush the skewers with a little extra marinade during the last few minutes of grilling.
  • Serve these skewers with a side of coconut rice or a fresh green salad.
  • You can prepare the marinade and cut the chicken and pineapple ahead of time, then assemble and grill when ready.
