1 tablespoon olive oil
1 pound ground chicken or lean ground beef
1 onion, chopped
1 bell pepper, chopped
1 (15-ounce) can black beans, rinsed and drained
1 (14.5-ounce) can diced tomatoes, undrained
1 cup enchilada sauce
1/2 cup water or chicken broth
1 cup riced cauliflower (fresh or frozen)
1 cup shredded cheese (cheddar or Monterey Jack)
1/4 cup chopped fresh cilantro, for garnish
Salt and pepper to taste
Instructions
Heat olive oil in a large skillet over medium-high heat. Add ground chicken or beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
Add chopped onion and bell pepper to the skillet. Cook for 5-7 minutes, until vegetables soften.
Stir in black beans, diced tomatoes, enchilada sauce, and water or chicken broth. Bring the mixture to a simmer.
Reduce heat to medium-low, then stir in riced cauliflower. Cover and cook for 5-7 minutes, or until cauliflower is tender.
Sprinkle shredded cheese over the top of the skillet. Cover and cook for 2-3 minutes, or until cheese is melted and bubbly.
Remove from heat. Garnish with fresh cilantro before serving.
Notes
For extra spice, add a diced jalapeƱo with the onion and bell pepper.
Serve with a dollop of Greek yogurt or a few slices of avocado.
