1 head cauliflower, riced
1 tablespoon olive oil
1/2 cup chopped bell pepper (any color)
1/2 cup chopped zucchini
1/4 cup diced red onion
1/4 cup cooked black beans, rinsed
1/4 cup corn kernels (fresh or frozen)
1/4 cup cherry tomatoes, halved
1/4 avocado, sliced
2 tablespoons lime juice
1 tablespoon chopped fresh cilantro
Salt and pepper to taste
Instructions
Heat olive oil in a large skillet over medium heat.
Add red onion, bell pepper, and zucchini to the skillet. Sauté for 5-7 minutes until vegetables soften slightly.
Add the riced cauliflower to the skillet. Cook, stirring occasionally, for about 5 minutes until the cauliflower is tender-crisp.
Stir in the black beans and corn. Cook for 2 more minutes until heated through.
Remove the skillet from the heat. Season with salt and pepper.
Divide the cauliflower mixture into two bowls.
Top each bowl evenly with cherry tomatoes, avocado slices, fresh cilantro, and a drizzle of lime juice.
Serve immediately and enjoy your healthy start!
Notes
For extra flavor, add a pinch of cumin or chili powder when sautéing the vegetables.
