A lean meatloaf recipe using ground turkey and fresh spinach for a nutritious, lower-fat dinner option.

  • 1.5 lbs ground turkey (93% lean or higher)
  • 1 cup fresh spinach, finely chopped
  • 1/2 cup whole-grain breadcrumbs
  • 1/4 cup milk (any type)
  • 1 large egg, lightly beaten
  • 1/2 small onion, finely minced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons ketchup (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a loaf pan or line a baking sheet with parchment paper.
  2. In a small bowl, combine the breadcrumbs and milk. Let stand for 5 minutes to soften.
  3. In a large bowl, combine the softened breadcrumbs mixture, ground turkey, chopped spinach, egg, minced onion, minced garlic, thyme, sage, salt, and pepper.
  4. Mix the ingredients gently with your hands until just combined. Do not overmix.
  5. Shape the mixture into a loaf shape and place it on the prepared baking sheet or into the loaf pan.
  6. Spread the ketchup evenly over the top surface of the meatloaf.
  7. Bake for 45 to 55 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
  8. Remove from the oven and let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • For a gluten-free version, substitute the breadcrumbs with 1/2 cup of oat flour or almond flour.
  • To keep the meatloaf moist, avoid squeezing excess liquid from the spinach after chopping.
  • You can prepare this meatloaf ahead of time and refrigerate it for up to 24 hours before baking.
