Ingredients

  • Beef chuck, cut into cubes
  • Beef broth
  • Diced carrots
  • Chopped celery
  • Diced onions
  • Potatoes, cubed
  • All-purpose flour
  • Olive oil
  • Tomato paste
  • Worcestershire sauce
  • Dried thyme
  • Bay leaves
  • Salt
  • Black pepper

Instructions

  1. Season the beef cubes generously with salt and pepper.
  2. Dust the seasoned beef with flour.
  3. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  4. Brown the beef in batches; remove and set aside.
  5. Add onions, carrots, and celery to the pot; cook until softened.
  6. Stir in tomato paste and thyme; cook for one minute.
  7. Return the beef to the pot.
  8. Pour in beef broth and Worcestershire sauce; bring to a simmer.
  9. Add bay leaves.
  10. Reduce heat to low, cover, and cook slowly until the beef is tender, about 1.5 to 2 hours.
  11. Add cubed potatoes and continue to simmer until potatoes are cooked through, about 30 more minutes.
  12. Remove bay leaves before serving.

Notes

  • For deeper flavor, sear the beef in batches to avoid overcrowding the pot.
  • If the stew is too thin, mix one tablespoon of cornstarch with two tablespoons of cold water and stir into the simmering stew until thickened.
