This recipe makes an elegant yet rustic heirloom tomato galette, perfect for showcasing colorful tomatoes in a flaky pastry. It’s a farmers’ market-fresh savory tart.

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup (1 stick) cold unsalted butter, cut into ½-inch pieces
  • ¼ cup ice water
  • 1 pound heirloom tomatoes, various colors and sizes
  • 2 ounces goat cheese, crumbled
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Combine flour and salt in a large bowl. Cut in butter with a pastry blender or your fingertips until mixture resembles coarse crumbs.
  2. Gradually add ice water, mixing until dough comes together. Form into a disk, wrap in plastic, and chill for 30 minutes.
  3. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  4. On a lightly flfloured surface, roll out dough into a 12-inch circle. Transfer to the prepared baking sheet.
  5. Arrange goat cheese over the dough, leaving a 2-inch border.
  6. Slice tomatoes into ¼-inch thick rounds. Arrange tomatoes over the goat cheese in an overlapping pattern.
  7. Fold the edges of the dough over the tomatoes, crimping to seal.
  8. Brush the exposed crust with olive oil. Season tomatoes with salt and pepper.
  9. Bake for 35-40 minutes, or until crust is golden brown and tomatoes are tender.
  10. Remove from oven and sprinkle with fresh basil before serving.
