Ingredients
Scale
1 fully cooked bone-in ham (about 7-9 lbs)
1/2 cup honey
1/4 cup Dijon mustard
2 tablespoons fresh rosemary, finely chopped
1 tablespoon fresh thyme leaves
Zest of 1 large orange
2 tablespoons fresh orange juice
1/4 cup packed brown sugar
1 teaspoon ground cloves
Instructions
Preheat your oven to 325 degrees F. Place the ham cut-side down in a roasting pan.
In a small bowl, whisk together the honey, Dijon mustard, rosemary, thyme, orange zest, orange juice, brown sugar, and ground cloves until well combined. This is your glaze.
Score the fat cap of the ham in a diamond pattern, about 1/4 inch deep, being careful not to cut into the meat.
Brush about one-third of the glaze evenly over the entire surface of the ham.
Bake the ham for 15 minutes per pound, brushing with more glaze every 30 minutes. Reserve some glaze for serving.
If the ham starts to brown too quickly, loosely tent it with aluminum foil.
The internal temperature should reach 140 degrees F.
Remove the ham from the oven. Let it rest for 15 minutes before slicing.
Drizzle with any remaining glaze just before serving.
Notes
For easier glazing, place the ham cut-side up if your roasting pan allows.
You can substitute dried herbs for fresh, but reduce the quantity by about half.
This glaze pairs wonderfully with a side of roasted root vegetables.
