1 pound elbow macaroni
1 tablespoon olive oil
1 cup finely chopped broccoli florets
1 cup shredded carrots
1/2 cup finely chopped cauliflower florets
4 tablespoons unsalted butter
1/4 cup all-purpose flour
3 cups milk
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon nutmeg
4 cups shredded cheddar cheese
2 cups shredded Monterey Jack cheese
Instructions
Cook macaroni according to package directions. Drain and set aside.
While macaroni cooks, heat olive oil in a large pot or Dutch oven over medium heat. Add broccoli, carrots, and cauliflower. Cook, stirring occasionally, until vegetables are tender-crisp, about 5-7 minutes. Remove vegetables from the pot and set aside.
Melt butter in the same pot over medium heat. Whisk in flour and cook for 1 minute, stirring constantly.
Gradually whisk in milk until smooth. Bring to a simmer, stirring frequently, until sauce thickens, about 5 minutes.
Stir in salt, pepper, and nutmeg.
Remove pot from heat. Stir in cheddar cheese and Monterey Jack cheese until melted and smooth.
Add cooked macaroni and reserved vegetables to the cheese sauce. Stir until well combined.
Serve immediately.
Notes
You can use other mild-flavored vegetables like zucchini or spinach.
For a smoother sauce, blend the cooked vegetables before adding them to the cheese sauce.
