Make waffles with added protein using cottage cheese and egg whites for a filling breakfast.

Ingredients

  • 1/2 cup low-fat cottage cheese
  • 2 large eggs
  • 1/4 cup oat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Cooking spray

Instructions

  1. Combine cottage cheese and eggs in a blender. Blend until completely smooth.
  2. Add oat flour, baking powder, vanilla extract, and salt to the blender. Pulse until just combined. Do not overmix.
  3. Preheat your waffle iron and lightly coat it with cooking spray.
  4. Pour batter onto the hot waffle iron according to your appliance’s instructions.
  5. Cook until golden brown and crisp, usually 4 to 6 minutes.
  6. Serve immediately with your preferred toppings.

Notes

  • For a sweeter waffle, add 1 tablespoon of maple syrup or a few drops of liquid stevia to the batter.
  • If the batter seems too thick, add one tablespoon of water or milk until it reaches a pourable consistency.
  • These waffles freeze well; cool completely before storing in an airtight container. Reheat in a toaster for best texture.
