- 1/2 cup low-fat cottage cheese
- 2 large eggs
- 1/4 cup oat flour
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Cooking spray
- Combine cottage cheese and eggs in a blender. Blend until completely smooth.
- Add oat flour, baking powder, vanilla extract, and salt to the blender. Pulse until just combined. Do not overmix.
- Preheat your waffle iron and lightly coat it with cooking spray.
- Pour batter onto the hot waffle iron according to your appliance’s instructions.
- Cook until golden brown and crisp, usually 4 to 6 minutes.
- Serve immediately with your preferred toppings.
Notes
- For a sweeter waffle, add 1 tablespoon of maple syrup or a few drops of liquid stevia to the batter.
